I love the Holiday season.  The weather is cooler, or at least it’s supposed to be,  in Southern California you never know.  I love the Fall colors, kids are back at school, and it is a great time to bake.  I bake all year round, even when it is over 100 degrees, thank God for central air conditioning!! But baking in the Fall is so much more festive.  So I started messing around with a cookie recipe for the holidays of ingredients that I like and remind me of the holidays, and this is what I came up with.  Hope you like it.

 

Chris's Holiday Cookie

Ingredients

  • 2 sticks Butter
  • 3/4 cup Sugar I use unrefined, non GMO cane sugar
  • 3/4 cup Brown Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla
  • 2 1/2 cups Flour I use unbleached flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt I use pink sea salt
  • 1/2 teaspoon Baking Powder
  • 1 cup Pistachios I use raw unsalted pistachios
  • 2/3 cup Dried Cranberries finely chopped
  • 1 tablespoon Orange Zest
  • 1 1/2 cups White Chips I use Guittard

Instructions

  1. Preheat oven to 375 degrees.  Line cookie sheets with parchment paper.

    Combine butter, sugar, brown sugar, eggs, and vanilla in large bowl.  Cream together and mix, I do it by hand, but if using an electric mixer, combine till creamy, just don't over mix it.  Then add flour, baking soda, baking powder, and salt, mix a bit, then add the good stuff, pistachios, dried cranberries, orange zest, and white chips.  Mix gently until all ingredients are combined.  

    I use a spoon to scoop out a ball of dough and place it on a cookie sheet lined with parchment paper.

    Bake at 375 degrees for about 9-12 mins.  Mine usually take 10 to 11 mins.  It just depends.

    Remove from oven and let cool on cooling rack.  

 

I just love these cookies.  The tartness of the cranberries, the crunch of the pistachios, the sweetness of the white chips, and the heavenly aroma and taste of the orange zest, just make this a tasty holiday bite that will have your senses singing.
