Bacon Stuffed Cherry Tomatoes

I love bacon and use it a lot in different dishes.  Bacon stuffed cherry tomatoes reminds of a BLT.  Tasty bite of food that makes a quick and easy appetizer.

Bacon Stuffed Tomatoes:

  • Good sized Cherry Tomatoes

  • Bacon

  • Mayo

  • Pepper

  • Basil

This is what I do:  I take a pound of bacon and cut it into small pieces and fry it up, drain, set aside.  Take several good-sized cherry tomatoes and basically gut the tomato, taking out the seeds and the inside stuff, so you have a little tomato bowl. Do this to all your tomatoes, then set aside.  Take cooked Bacon, a bit of mayo, just enough to coat the bacon, add some pepper and mix it up, then take that and stuff it into the tomato and top with Basil.  So yummy.  Hope you like it.

Here is another version, you will need:

  • cherry tomatoes
  • bacon
  • spinach
  • onions
  • mayo
  • salt, and pepper

Cook bacon, drain, set aside to cool.  Slice off top of tomatoes and remove insides, set aside.  Take bacon and finely chopped, take onion and finely dice, chop up fresh spinach.  In bowl combine everything but the tomatoes and mix gently, but well to incorporate ingredients, then stuff the mixture in the cherry tomatoes.

It is a delicious, fresh bite with bacon, everything is better with bacon, lol.  Hope you like them.

    Here in Florida is is still hot and humid as ever. Hopefully the cold air sets in by October.
